Description
VI-A-DRY BOSS™ is a Saccharomyces cerevisiae var. bayanus yeast strain that was selected for hard seltzer and other low nutrient, sugar-based fermentations, due to its fast and secure fermentation rate and neutral aromatic profile.
VI-A-DRY BOSS™ does well under very difficult fermentation conditions. This yeast strain can ferment simple sugars and tolerates high ethanol and low pH over a wide range of temperatures. Though VI-A-DRY BOSS™ has one of the lowest nitrogen demands of any Saccharomyces strain, fermentation kinetics are improved with comprehensive nutrition. VI-A-DRY BOSS™ does not produce any undesirable sensory compounds and is considered sensory neutral.
