ENOFERM SYRAH™ offers good mouthfeel, stable color extraction, and enhances varietal aromas.- Typical aromas include berry (strawberry and raspberry), plum, violet, spice, licorice, and black pepper depending on the varietal
- Fermentations start quickly, have a moderate ongoing fermentation speed, and low VA production
- Can produce H2S under low YAN conditions, hence rehydration with GO-FERM PROTECT EVOLUTION™ and nutrition management is essential
- Saccharomyces cerevisiae cerevisiae strain
- Isolated from the Côtes du Rhône region, France
