All-purpose hybrid yeast for fruity wines with mouthfeel; Chardonnay, Viognier, Chenin blanc, Syrah, Merlot, Tempranillo, Grenache
Produces white wines with guava, passion fruit, tropical and stone fruit aromas and flavors as well as good mouthfeel. In red wines, Exotics Mosaic has shown aromas of cherry, floral, cocoa and strawberries. Reds are described as full-bodied, well-balanced, complex and intense.
White wines produced using this yeast are described as having exotic aromas and flavors, as well as good mouthfeel. It enhances guava, passion fruit, tropical and stone fruit aromas and flavors. Exotics SPH is cold sensitive and ferments at a steady rate in barrels.
Steady fermenter but sensitive to cold temperatures. Can produce elevated levels of glycerol (9–13 g/L) which potentially leads to lower alcohol. Low volatile acidity and SO2 production.
Strain can partially degrade malic acid and is known to facilitate and enhance malolactic fermentation.
Exotics Mosaic is a hybrid of Saccharomyces cerevisiae and S. paradoxus developed at the Institute for Wine Biotechnology at the University of Stellenbosch in South Africa.Storage:
