SHELF STABILITY WITH VELCORIN®

Seltzer’s high pH and relatively low alcohol levels make it a microbially high-risk beverage. For this reason, it’s important to complete a final package stabilization step. Velcorin® is an alternative to pasteurization that deactivates spoilage microorganisms including yeasts that can cause refermentation, and other microbes that may produce off-aromas and flavors.
