Versatile strain for fruity, early-to-market wines with soft, round mouthfeel
EXOTICS NOVELLO is known for enhancing mouthfeel, softness, and aromas in white and red wines.- In white wines, fresh, fruity thiols and floral esters are revealed while astringency and bitterness are decreased
- In red wines, red and black fruits and spice are increased while green and vegetal characters are diminished
- Low VA and H2S producer and has some pectinase activity
- S. cerevisiae and S. cariocanus hybrid
- Developed by Anchor Oenology in collaboration with the Australian Wine Research Institute (AWRI)
- Must be stored at 5-15°C (41-59°F)
